Ram’s Head Inn chef Jason Holmstrom, plating the third course, got the idea for the collaborative eight-course tasting dinner when he attended two of Chris Groome’s monthly dinners at Groome’s Mays Landing bake shop, Brownies Squared.
The eight-course tasting dinner Jan. 13 at the Ram’s Head Inn in Galloway Township drew 31 diners, including two who are on the wait staff at the Ram’s Head. ‘It was incredible,’ said Jacob Cavileer, of Absecon. ‘I’ve served dinners like that, but I’ve never been able to sit down and enjoy each course. ... It was perfect.’
The fourth course was thyme and shallot-basted scallop, with carrot puree, fennel and pancetta.
