Joe Mikitish, of Margate, watched as the judges sampled his salmon dish recently at the S. Pellegrino Almost Famous Chef cooking competition in New York City. The nine judges used several critera in their decisions, including presentation, creativity and practicality of his dish.

Mikitish’s dish consisted of hand-smoked salmon with a Southwestern farro risotto, chipotle avocado vinaigrette, cilantro oil, fried baby artichokes and pan-seared cherry tomatoes.
The dish created by Joe Mikitish, of Margate, received criticism for incorporating out-of-season vegetables, but overall was well-received, he said. ‘All (the) judges, down the line, said that the fish was cooked perfectly, which is a great feeling,’ Mikitish said.
