Smaller Twinkies

Twinkies are back, but they may be a bit smaller than you remember.

The new boxes hitting shelves this week list the spongy yellow cakes as having 270 calories and a weight of 77 grams for two cakes, or 135 calories and 38.5 grams for one cake.

Right before it went out of business, the predecessor company said Twinkies were 150 calories per cake. Photos of past boxes online also indicate the weight to have been 42.5 grams per cake.

A spokeswoman for Hostess, Hannah Arnold, said in an email the size change was made in "mid-2012" by the predecessor company.

Oil for margarine

Baking substitutions are tricky, but they are worth trying to see if you like the result. However, oil does not work exactly the same as something like butter or shortening that is solid when chilled.

Many cookies or cakes involve creaming, or beating air into the mixture of butter and sugar. Oil won't hold air in the same way, so the cookies may have a crunchier texture and may dry out more quickly when you store them.

Try replacing half of the butter or margarine with oil and see if you like the texture. If you want to use all oil, use a little less than the butter called for, usually

3 1/2 tablespoons of oil for 4 tablespoons of butter.

What it goes with: Shellfish, seafood pasta and risotto, Thai or Indian food

The Wachau region north of Vienna is known for its Gruner Veltliner, and Nikolaihof produces some of the best. This 2011 Hefeabzug (aged on the lees) is crisp and refreshing, mineral-driven and with the characteristic aromas of green apple and white pepper.

You can drink this terrific summer white with chilled shellfish, smoked trout, lobster and crab. Seafood pasta and risotto too. It's also a great match with Thai or Indian food.
