Revel is taking over one of its high-profile restaurants from a private operator, a move that will require more than 100 employees to reapply for their jobs.

The consolidation plan involves food and beverage operations on the sixth level, the same floor as Revel’s hotel lobby. It will mostly affect O Bistro and Wine Bar, a California-style eatery that features panoramic views of the ocean and beaches from its perch 114 feet above sea level.

“This is an operational change that is taking place to meet our business needs,” Revel spokeswoman Maureen Siman said in a statement. “The restaurants will remain open and will be re-launched with a new name, new menu and extended hours of operation.”

A private company, Central Lobby LLC, had been managing O Bistro and other food and beverage operations on the sixth level. Central Lobby filed a notice with the New Jersey Department of Labor warning that 120 employees could possibly lose their jobs in the consolidation plan.

However, Central Lobby representative Mel Davis said the notice was a formality that simply reflects the management switch. Employees must reapply for their jobs under Revel’s takeover and will be given first preference for hiring, Davis and Siman said.

“It makes sense from a management standpoint to hire someone who’s already worked there,” Davis said in an interview Wednesday.

Central Lobby disclosed in paperwork filed with the Department of Labor that the company and Revel have dissolved their lease agreement for O Bistro. No reason was given for the breakup.

Central Lobby is part of a restaurant group controlled by celebrity chef Michel Richard, a Frenchman who is famed for his award-winning Central eatery in Washington, D.C. He also operates an upscale restaurant at Revel called Central Michel Richard. That restaurant will continue to operate at Revel and is unaffected by the management switch involving O Bistro, Davis said.

Richard’s restaurant is part of an eclectic lineup of culinary talent at Revel, the $2.4 billion casino megaresort that opened in April. Other celebrity chefs who have a presence at Revel include Jose Garces, Marc Forgione and Alain Allegretti.
