Sydney Matuson, 3 1/2, and her mother Priscilla Matuson wash and peel fruits and vegetables for their lunch on Thursday, June 23. Greg and Priscilla Matuson and their daughters, Ainsley, 4 1/2, and Sydney were diagnosed with celiac disease, a genetic disorder which affects nutrient absorption in the small intestine. Upon diagnosis, Priscilla, then 33, was told she had the bones of an 80-year-old. The family now lives a vegan, gluten-free lifestyle, which is difficult and expensive.
