Nicole Jacoby, 35, of Ventnor, started eating a vegetarian diet at 12 years old, and a passion for plant-based cuisine was born.

Jacoby, with her husband Lambros Psounos, opened their first Greens and Grains eatery in 2014. The menu promotes healthy eating, cooking and living with plant-based inspired dishes and drinks. Since then they’ve opened four locations, with another one planned for 2017. “This is for personal health, the community and for environmental impacts,” she said. “We have military coming in, students, yoga moms getting kale smoothies—there’s something for everyone. We’re trying to create something that’s fresh and fun.”
